Ichiro Mashita, sushi chef at the Tokyo Kaikan in Los Angeles, invented the California Roll in the early 1970s. Mashita added avocado as a substitute for tuna. He also turned the roll inside-out because Americans did not like seeing and chewing the nori on the outside of the roll.

Cooking steps
